Invented dinners!


I wasn't sure what to make for dinner tonight. Our cupboards aren't bare, (I'm a stockpiler- we buy in bulk and on sale...) but we are getting down to the last of the obvious meals now, without a lot of extra cash to spend at the grocery store this month. Honestly, some of our best meals come of such circumstances. I guess it's the whole necessity is the mother of invention-- and when money is tight- the inventing takes place in the kitchen.
 
So, looked around to see what I could piece together. I grabbed some tube pasta, & the last of a bag of frozen stir fry vegetables from costco. This was probably about a pound of mixed veggies but these were broken small bits- --- brocolli, bell peppers, mushrooms, carrots, mini corn, water chestnuts... I always have olive oil & garlic... So I figured this would work nicely! I heated the water, tossed in the pasta which I cooked for half the cooking time then I added the veggies to the pasta water for another 5 minutes. Meanwhile I crushed a bunch of garlic and added it to some hot olive oil. After the pasta was cooked- I drained it and tossed it all in a bowl with the garlic olive oil. This was awesome! Another easy, delicious dish that will become a frequently repeated meal around here! :)

Your creative inventions come from practice and resourcefulness! Recently was in similar situation. Luckily had lots of lentils which cook up quickly, along with onions and garlic. Throw in curry spices, herbs and rice and you've got a nutritious meal for four that probably cost less than $5.
